Some of you may know I took a comprehensive food allergy exam at my doctor’s office. It was the real deal.
My blood samples were sent to a lab in another state and the results came back around three weeks later. Two of the food listed for me to avoid were gluten and eggs. Wham! What a combo.
Anyway, this is a recipe my wife made for us. It’s a 100% gluten free black bean burger recipe.
They taste super good and it’s such a relief knowing I can eat gluten free food that tastes good and still makes me feel healthy and full.
I really believe if you are truly allergic to gluten you should make most of your own meals.
99% of restaurants in my experience don’t offer 100% gluten free no matter what they say. Most places cook all the food using the same equipment.
Cross contamination is almost a certain. It isn’t if you cook at home though.
Those fries by the way are just cut up organic potatoes with a little olive oil and sea salt. Yummy!
Gluten Free Black Bean Burger Recipe Ingredients
1 can Black Beans – Organic if you can find it
Brown Rice – Organic and definitely Non-GMO (one serving)
1/4 red pepper – Organic
1/4 tsp. sea salt – pink Himalayan salt is the best for this
1 stalk of celery
Bread Crumbs – gluten free of course!
1 Tbsp. Worcestershire sauce (gluten free)
1/2 Tbsp. of freshly-ground flaxseed (optional)
Prepare brown rice for 1 person according to package directions. Mash beans with a fork in a mixing bowl, leaving a few beans whole.
Add 1/2 cup of the cooked rice to the beans. Finely chop onion, red pepper, and celery. Grate carrot. Combine all of the ingredients, including flaxseed and Worcestershire sauce and mix well.
Form into patties and bake at 350 degrees for 10-15 minutes. If necessary, flip burgers and cook 10 more minutes. You can eat the burgers on a bed of lettuce.
